Introduction
At the time of its opening in 2006, it was unusual to use hamaguri clams in ramen, but it became very popular. In 2016, on it's 10th anniversary, they renewed all "soy sauce", "salt" and "tsukemen", broths, expressing more complex flavors. "Soy Sauce Soba" (¥850) extracts a richly distinctive flavor from clams and pairs excellently with in-house noodles. 拉麵的湯底層出不窮,但說到基本的四大口味,我最喜歡醤油。每次香港有以醤油拉麵為招牌的麵店開業,我都會加以留意。可是每次不用試也感失望,因為單看照片就知道根本不是那回事,醤油湯混濁得跟豚骨湯沒兩樣,不禁會想,那些人是真的有見過醤油拉麵嗎?東京賣醤油拉麵的店如銀河沙數,近期人氣飊升的就是這家不如帰。它就在幡ケ谷,在新宿乘京王新線或在渋谷坐巴士都可到達,十分快捷方便,是次來東京便鐵了心要拜訪它。 平日開店前半小時已有不少人候著。 店實在很小,只有八個座位,冬天大家都穿著厚衣大褸,更顯狹逼。要是想當第一批入座吃的真的要預早一點排隊。 除了醤油,它還有賣塩拉麵、飯和沾麵等,而我當然就是選了最受歡迎的味玉そば(醤油)¥850。醤油湯以蛤貝汁、豬和雞等熬成,表面飄浮著一些焦了的醤油。鹹味淳厚溫和,在口腔久久化不去,跟我另外很喜歡的 ほん田 那碗甘甜的醤油湯南轅北轍,但二者在我心中都是名列前茅,難分高下。 大大的一片叉燒厚薄恰好,肥脂入口帶爽,很不俗。筍是切條狀而非片狀的,口感非常佳。 味玉雖不如前一夜TETSU的流心,但煮得入味,蛋黃也是半熟狀態,不錯。用上三河屋製麺的幼麵,麵條脈絡分明,嚼下彈牙有勁,是甚少會得我歡心的幼麵。很高興又找到一家心頭好麵店。有朋友問我是怎麼選麵店的,其實我都是看tabelog和網上其他平台的資訊。另外ラーメンWALKER 也是本十分詳盡的好雜誌,推薦大家到日本時可到書店翻看一下。 continue reading
