Owner Masashi Yamaguchi trained at sushi restaurants in the Ritz-Carlton Hotel Tokyo and other establishments before serving as the founding head chef of Sushi Wakon at the Four Seasons Hotel Kyoto, where he led the restaurant to a one-star rating.
He then became the founding head chef of Sushi Wakon at the Peninsula Tokyo, before going independent in June 2020.
