上一次到訪東京很幸運地預約到這間米芝蓮一星的拉麵店 - 銀座八五。這間拉麵店一位難求,逢星期六日本時間早上九時正會在網上開放預約訂位,當日早上大概1分鐘便全部預約滿,所以真的十分幸運呢。預約當天來到銀座八五,職員在店外給我們Menu選擇想吃什麼,一場來到當然選擇一個什麼也吃得到的選項,原本也想試一試他的肉ご飯,可惜已經完全全部賣完了,唯有找個原因給自己再來一次吧。這裏只有六個座位,所以真的是一位難求。主廚原來是酒店法式料理的廚師,後來自立門戶。這次選擇了ラビオリグルマンディーズ中華そば,日元2200一碗,配菜包含了叉燒、糖心蛋、黑松露鵝肝雲吞。首先拉麵的湯底豉油雞肉、鴨肉、貝類、火腿等等熬製兩日而成,湯底非常清澈,喝下去很鮮甜順口。這裏的拉麵是幼拉麵來的,本人非常喜歡吃這類型的拉麵,拉麵很掛湯。配料方面糖心蛋味道濃郁,時間控制得剛剛好。叉燒亦10分嫩滑。最讓我欣賞是黑松露鵝肝雲吞,味道非常香濃,放進口內鵝肝的香氣都散發在口中。總括而言,這間一位難求的米芝蓮一星拉麵店真的是很值得各位一早來排隊或是在網上交出日圓500訂位。希望下次去東京也有機會再試多次。Read More
